VIRAL Dot Cake

Ingredients:
For the Vanilla Cake:
½ cup + 2 tbsp flour (I used gluten-free)
1 tsp baking powder
¼ tsp salt
½ cup granulated sugar
1 egg
2 tbsp avocado oil
2 tbsp sour cream
½ tsp vanilla extract
¼ cup milk
Strawberries, for filling
Round sprinkles, for topping

For the Whipped Cream:
¼ cup heavy cream
2 tbsp granulated sugar
¼ tsp vanilla extract
Pinch of salt

Directions:
For the Vanilla Cake: Preheat the oven to 350 F
In a bowl, whisk together the flour, baking powder, and salt
In a separate bowl, whisk together the sugar, egg, avocado, oil, sour cream, vanilla extract, and milk, then add in the flour mixture and whisk to form a moderately thick batter
Pour into 2 4-inch square baking tins, then bake for 20-25 minutes, until golden on top
Once cooled, cut the tops off, then use a circular ramekin with a diameter smaller than the cake squares and cut out circles from the cake
Press one of the cake circles into the bottom of the ramekin, thinning it down if it is too thick
For the Whipped Cream: In a bowl, use an electric mixer to whisk together the heavy cream, sugar, vanilla, and salt until it is thick and stiff peaks have formed, then place into a piping bag
Pipe a layer of whipped cream on top of the cake in the ramekin, then add the strawberries and place the second layer of cake on top
Press down, so that the cake is level with the top of the ramekin, then add a thin layer of whipped cream on top
Press the top of the cake into multicolored round sprinkles until fully coated, then serve
